Tokyo Express | Our Story
Our Story
Long before Tokyo Express, a young college girl named Snow was pulling late shifts at a hibachi Japanese restaurant — running plates of sizzling steak and shrimp, learning the rhythm of the grill, and saving every dollar to pay for tuition, books, and a future she was still dreaming up.
Between orders, she kept a quiet wish tucked close to her heart —
“One day, I'll have a little hibachi place of my own. A place that feels like home.”

That was many years ago. College came and went. Life brought her a husband, two beautiful children, a home in Greensboro, and more kitchens than she ever imagined cooking in. By her side is her husband, Nathan Joyce — a previous owner of Pika Tea, who carries his own deep love for the boba world. Nathan found real joy in that chapter of his life: the smiles of kids clutching their cups, college students turning a quick boba run into a two-hour hang, families celebrating little moments over something sweet. When Pika Tea's chapter closed, that passion didn't go anywhere — it simply found a new home. Together, they let their dreams grow up right alongside each other — and bloomed into Tokyo Express — Hibachi and Boba, where the sizzle of the grill meets the happy pop of tapioca pearls.
Today, every plate Snow serves and every cup she shakes carries the same spirit that started it all: hustle, heart, and the love of a mom who believes a good meal can make someone's day a little brighter.
